MyohMya!!!! Jambalaya!!!!



David and I had this last night for the first time and it was excellent!!

Jambalaya

Yield:4 large servings @ 6 points per serving

(I will have to put through a calculator to determine NI!)

Cooking spray
2 onions, chopped
3 garlic cloves, minced
1 1/3 cups white rice (uncooked)
2 cups low-sodium chicken broth
one 14 1/2 oz can diced tomatoes

2 teaspoons minced thyme
1 cup diced ham or chicken(cooked)
1/2 teaspoon salt
dash cayenne pepper
1 pound raw shrimp, peeled

In large non-stick saucepan, saute onions and garlic, until softened, about 5 minutes.

Add rice, stirring to coat, about 1 minute.

Stir in broth, tomatoes, ham/chicken, thyme, salt, cayenne, and bring to a boil.

Reduce heat and simmer, covered, 15 minutes

add shrimp and cook until rice is soft, 5-10 minutes longer
